Quinoa Burger or Beef Burger?

Quinoa Patties

 

New to making vegetarian dishes, my attempt at this new dish was super successful!  Yeah:)  Recently, I decided to try to eat mostly a vegetarian diet while occasionally eating meat (for now).  So far, I have been really enjoying some great vegetarian recipes and am discovering how great veggies can taste with some creative ideas.

Since I am a lover of a good burger, I thought I would try to make a vegetarian quinoa burger.  I must say, I can see myself replacing meat burgers with this recipe, I am so in love with these scrumptious bundles of healthy goodness….. If you know anyone who is passionate about their work and might like some quinoa burgers, let me know and I might just give them a “feedback”

 
 

Quinoa Burger Ingredients

1 onion (diced)
1 red pepper (diced)
3 cloves of garlic (minced)
1 cup black beans
1 cup shredded carrot
2 cups cooked quinoa
2 eggs
1 cup shredded cheddar
Salt, pepper, cumin, coriander seed to taste

Spicy Basil Dipping Sauce

6 basil leaves
1/2 cup mayo
1/2 lemon juice
Tbsp olive oil
2 dashes of cayenne
3 squirts of sriracha
1/2 tsp garlic powder
Salt and pepper to taste.

Sauté the onion and pepper first until softened, then add the garlic, carrots and black beans. Season with S&P, cumin and coriander seed. Once warmed through set aside to cool.

Make the quinoa and add turmeric and saffron before adding water. Once cooked let cool in fridge.20140323-103408.jpg

In food processor mix bean mixture with 1 cup of quinoa.

Then in a large bowl add the mixture with the remaining quinoa, 2 eggs and shredded cheddar and cool in fridge for 15 minutes.

Form patties from the mixture and fry on both sides in a little bit if olive oil. Try to form patties 1/2 inch thick and compact, otherwise they may fall apart.

Spicy Basil Dipping Sauce

– combine all ingredients in a food processor or blender.

Makes great left overs the next day on a warm corn tortilla with the spicy basil sauce.
