Cool Cucumber Summer Salad

I am not a fan of salads although I probably eat one every day. I really struggle eating a leafy green salad unless it’s loaded with dressing, croutons and bacon bits. Usually we eat a salad for dinner where I begrudgingly force myself to eat it, only for roughage and health reasons but really, I only eat salads to make up for all the times I eat burgers and poutine…haha! 🙂

So I have been trying to focus on a low carb eating plan to try and shed some weight and keep some form of a healthy diet. Plus I am turning 40 this year and figure I need to get a little more serious about my health.

I stopped eating cucumbers as a child when I was enjoying a hearty cucumber salad my mother made. As I was just about to take a bite and discovered a little worm crawling on the tip of my fork. Yup, that was it for me, no more cucumbers, ever again! Until now that is……

Yes, about 30 years later of coming face to face with that slimy worm, I decided to give cucumbers another chance and I have been munching on this lively, fresh and lemony cucumber salad all summer.

Some of you may think its just a simple Greek salad but I like to call it a fresh and cool cucumber summer salad. Plus it’s a far cry from the boring leaf lettuce salads that I dread and it’s hearty enough to be a meal on its own.

This chunky and fresh lemony salad is made with light feta cheese, orange peppers, sliced black olives and cucumbers of course.

Here is how I make it:

1 cucumber peeled, seeded and cubed
1 orange pepper cut into cubes
1 can of slices black olives
3 oz of light feta cheese crumbled

Combine all ingredients in a large bowl.

Dressing:
Zest and juice of one lemon
1/4 tsp of ground coriander
1 tsp of dried oregano
1 tbsp of fresh basil (minced)
1 tsp of black pepper
1/4 cup of olive oil
1/4 tsp of ground cumin

I must warn you, if you serve this salad to your guests they will be fighting over who gets to slurp up the leftover juice after the salad is gone.

Whisk all ingredients in a small bowl and then toss over the salad. Mix and enjoy 🙂

Here is a summer tip my mother used to do when making her cucumber salad. Chop of the tips of the cucumber and smack them onto your forehead for a cool refreshing feel. You may look silly but oh so cool…lol
