Sorta Sugar Free Mocha Cheesecake

I made this cheesecake during our annual ribfest parties.  I made it with splenda, the only sugar in it is from the graham crackers.  Everyone at the party loved it.  The espresso powder gives it a rich carmelized flavour.


3 packages of cream cheese
1-1/2 cups Splenda or Sugar
6 large eggs
500ml Sour Cream
1 tbsp Vanilla
2 cups Graham crumbs
3 tbsp butter
1 tbsp Splenda or Sugar

3 tablespoons of espresso powder

1 teaspoon of cinamon

3 ounces of unsweetened chocolate

•       Combine graham, melted butter and sugar in a bowl.
•       Press into spring form pan 10”
•       Bake in oven at 275 for 10 min


•       Mix cream cheese until creamy
•       Slowly add splenda and mix
•       Add eggs, one at a time
•       Add the rest of the ingredients and mix at medium speed for 3 minutes
•       Cook for 1 hour at 300; place a pan with water on the rack underneath it
•       Turn oven off and leave cake in oven for 1 hour

Let cake cool slowly to avoid the crack

All ingredients to be at room temperature


Double boil the chocolate, once its melted use a spoon to splatter the cheesecake back and forth and around the parameter of the cake.
